TRI-COLOR PASTA SALAD

I just love a creamy Pasta Salad, and this salad is very easy to make, and you can have it ready to go in under 30 minutes. Made with simple ingredients that you probably already have in your cupboard and fridge.


In my recipe I used Mayo and Mustard, with Sweet Relish which gives it a nice tangy kick. And what’s great about this salad it will keep in your fridge for up to 5 days and still taste amazing.


As I mentioned in my video, I put the Onions and Celery in the food processor because I want the veggies to be chopped fine and about the same size. I found out when I do this that the salad blends better and has a creamier texture instead of crunching into big pieces of veggies.


I also added Shredded Carrots which are shredded very fine, so they blend in perfect with this salad. This salad should be served chilled for best results. You can use whatever pasta you like, but I love the Tri-color Pasta, the green pasta is Spinach flavored, and the Orange color is Tomato flavored, and the different colors makes a beautiful presentation at any gathering. So, make this for you family or guest, I am sure they will gobble it up. Enjoy!









TRI-COLOR PASTA SALAD



INGREDIENTS


1 12oz box of Tri-Color Rotini Pasta

6 Hard Boiled Eggs (chopped)

1 1/2 Cups of Mayonnaise

1 Tablespoon of Yellow Mustard

2 Tablespoons of Sweet Relish

1/4 Cup of Red Onion (Chopped)

2 Stalks of Celery Chopped

1/4 Cup of Matchstick carrots (Shredded Carrots)

1 Teaspoon of Onion Powder

1 Teaspoon of Garlic Powder

1 Teaspoon of Ground Black Pepper

2 Tablespoons of Sugar

1 Teaspoon of Salt

1/8 Teaspoon of Ground Red Pepper

1 Teaspoon of Paprika


DIRECTIONS


Boil Pasta for about 9 minutes until tender, drain and rinse under cold water until pasta is cool. In large bowl, mix Mayonnaise, and mustard together blending well, add Onion powder, Garlic powder, and Salt, then add Onion, Celery and Black Pepper, mix well.


Then add Sugar, blend until combined, add carrots, eggs, and Relish, blending well. Add Rotini pasta stirring to combine, then add the Ground Red Pepper and Paprika, blending well. The pasta salad should be complete, transfer to serving dish and sprinkle with Paprika on top for garnish. Refrigerate until serving. Enjoy!
