Cabbage is a dish that is welcome in my house, we love it in Coleslaw, Fried, or as a skillet dinner like this recipe. This recipe is extremely easy to make and so delicious that I like to serve this in my house at least once a month. There are different variations of this recipe, some cooks prepare this without the potatoes, but I prefer to add them to my recipe because it gives the dish that extra zip, the potatoes absorb all the seasonings and gives it a creamier taste.
Some recipes call for Apple Cider Vinegar, but in my recipe, I prefer to use Red Wine Vinegar, you can use either one or you do not have to use vinegar at all its your choice but believe me the vinegar gives it such extra flavor. I also, like to use a few slices of Bacon in my recipe along with the Smoke Sausage, the Bacon enhances the Smoke Sausage, resulting in a smokier flavor. You can also use Kielbasa instead of Smoke Sausage, either one of the two works very well in this recipe.
The good thing about this recipe is that it can be served as a side dish or a light main course and reheating the leftovers the next day is as delicious as the first day you served it, my husband said that it tastes better the second day because all the seasonings just seem to stand out more. This dish is particularly good the way it is but feel free to be creative and add shredded carrots, red pepper flakes or Cajun seasonings to the pan, put your own added touches. I did not add the red pepper or Cajun seasonings to my recipe, only because my husband does not like his food too spicy and he is not particularly fond of carrots. CABBAGE SMOKED SAUSAGE & POTATOES SKILLET DINNER
INGREDIENTS
1 - 14 oz Pack of Smoked Sausage
3 Strips of Bacon (cut in pieces)
1 Medium Head of Cabbage
3 Medium size Russet Potatoes
1 Medium size Red Onion
1 half of Red Bell Pepper (sliced)
1 half of Green Bell Pepper (sliced)
2 Tablespoons of Seasoning Salt
Pure Ground Black Pepper to taste
1 Tablespoon of Garlic Powder
1 Tablespoon of Sugar
2 Tablespoons of Red Wine Vinegar
3 Tablespoons of Butter

In large pot, add 1 cup of water and bring to boil, cut cabbage in quarters and remove stalk, cut cabbage in pieces and rinse under cold water and drain. Add 1 teaspoon of salt to boiling water and add cabbage, put lid on and let wilt for about 5-7 minutes.
In large skillet, add bacon that is cut into pieces and sliced smoked sausage and let brown lightly, add, red bell pepper, green bell pepper, and onion to skillet, then add potatoes and mix well. Add 1 teaspoon of seasoning salt and black pepper, then add the cabbage, mix until combined.
Then add the remainder of seasoning salt, pepper to taste, garlic powder, sugar and red wine vinegar. Mix to combine all ingredients, then add the butter, mix well, then cover the skillet and cook over medium heat for about 15 minutes until potatoes and cabbage are tender. Enjoy!
