Growing up in our household we were used to eating a variety of foods, my mom was the type of cook that was skilled in a lot of areas of cuisine. We never knew what was going on our dinner table from one day to the next. She would fix a lot of different meats, so Lamb was one of the dishes that she would make frequently, my mom loved lamb.
Sometimes she would fix the shoulder loin cut, but her favorite was the rib sections, she would call them Lamb Lollipops. I can remember her cooking Lamb and she would always sear the meat in a skillet to get it light brown and then she would finish them in the oven the same way I did when I prepared this recipe. She would make the butter sauce like I did and throw in the Thyme and Rosemary, and I fell in love with the smell that would hover in the house when she would make this dish.
When I prepared this recipe for the video, my husband could not get enough of the Lamb Chops, he asked me just today when am I going to make them again? So, I guess I will have to put that on my shopping list the next time I go to the store. This is an amazing recipe, and the Lamb came out nice and tender, it just melted in your mouth, my mouth is watering just thinking about it. So, give this recipe a try, you’ll be glad that you did.
DELICIOUS LAMB CHOPS
INGREDIENTS
8 Rib Lamb Chops = 1 Rack
Black Pepper to taste
Sea Salt to taste
Garlic Powder to taste
2 Tablespoons of Olive Oil
2 Tablespoons of Butter
5 Garlic Cloves (smashed)
2 Sprigs of Fresh Rosemary
2 Sprigs of Fresh Thyme
DIRECTIONS
Preheat Oven to 400F Degrees
Wash Lamb Chops, season to taste with Sea Salt, Garlic Powder, and Black Pepper on both sides. In Large Skillet add 2 Tablespoons of Olive Oil and heat until skillet is hot not smoking. Add Lamb Chops and Sear on each side for 4 minutes on each side, remove chops and place them in a baking pan.
In same skillet, do not remove oil, leave oil and drippings in skillet, add the 2 tablespoons of Butter, add smash Garlic, Rosemary, and Thyme, simmer until you smell all ingredients strongly about 3 minutes. Pour sauce over Lamb Chops, cover with foil and bake at 400F degrees for about 17-20 minutes, depending on oven. Enjoy!
