Smothered Chicken is something that I grew up with in our house, sometimes my mom did not want to serve fried chicken, she would say, we have fried chicken at least once a week so I’m going to smother it instead of frying it, and we knew at that moment that we were going to get tender chicken smothered in her delicious gravy. When my mom would prepare gravy, she would always add mushrooms and onions to the skillet, and we just could not get enough of it.
That rich flavor from the chicken and the creamy texture from the heavy cream that she would stir in the gravy made a world of difference, to be honest, I could just eat the gravy alone. My mom was a Master at making homemade gravy and I am proud to say that she taught me well.
What is great about this recipe is, you can use any part of the chicken, in this recipe I used drumsticks, but I have also made this recipe with chicken thighs, chicken wings or chicken breast, the recipe is so versatile that you can even use pork, which I do have a recipe on this site for Pork Steaks with Mushroom Onion Gravy also. SMOTHERED DRUMSTICKS WITH MUSHROOM ONION GRAVY
INGREDIENTS
6-8 Chicken Drumsticks
1 8 oz package Sliced Mushrooms
1 Small Onion Sliced
2 Teaspoons of Adobo
1 Teaspoon of Onion Powder
1 Teaspoon of Garlic Powder
1 Teaspoon of Ground Black Pepper
5 Tablespoons of All-Purpose Flour
1 Cup of Heavy Cream
2 Cups of Water
3 Tablespoons of Olive Oil
4 Tablespoons of Butter
DIRECTIONS
Wash Chicken very well, pat dry, season chicken with Adobo, Onion Powder, Garlic Powder, and Black Pepper, set aside. To Skillet add, 3 Tablespoons of Olive Oil and 2 Tablespoons of Butter, add chicken and lightly brown on all 4 sides for at least 5 minutes each, on medium low, this process should take about 20 minutes, remove chicken from skillet and set aside.
To Skillet add 2 more Tablespoons of Butter, do not remove pan drippings, add the 5 tablespoons of flour to skillet making sure to stir well, add black pepper and salt to taste, continue stirring flour until it begins to brown, keep stirring, make sure heat is not too high because the flour will burn, and if the flour burns your gravy will taste burnt.
When flour is about a medium brown, add hot water to skillet very slowly and continue stirring until the sauce begins to thicken, lower heat, add the cup of heavy cream and continue to stir until well blended. Add Mushrooms and Onions and let simmer for about 3 minutes, add Chicken to the sauce and cover skillet and let simmer for 10 minutes. After 10 minutes turn chicken, recover and let simmer for 10-15 more minutes, your meal is done. Enjoy!
