SUPERIOR MEATLOAF

I am extremely excited about this Meatloaf recipe; I have made Meatloaf for my family for years and this recipe by far is their favorite. The blend of seasonings and eggs paired with the Panko breadcrumbs makes a juicy flavorful meatloaf. Most Meatloaf recipes include milk, but I preferred to use Beef broth instead and that was a great thing to do on my part. The beef broth enhanced the flavor of the meat leaving a very juicy and flavorful creation.


Also, in this recipe I used chopped red onion and minced garlic, so I know you were probably wondering why the onion and garlic powder? Well, I used two pounds of ground meat in this recipe and using the onion and garlic powder boosted the flavor of the fresh onion & minced garlic. I have cooked many of recipes over the years and I found out that using two pounds of any meat in a recipe instead of one pound, some of the flavor of the onion and garlic gets loss and needs a boost to kick it up a notch.


Now, lets talk about the Glaze. This is an amazingly simple glaze that is quick and easy to make, the ketchup paired with the brown sugar and red wine vinegar makes a sweet and tangy sauce that will make your meatloaf the star of the meal. Therefore, I call this Superior Meatloaf. Another thing you can do is double the glaze recipe if you want to spoon some over the meatloaf after you slice it. SUPERIOR MEATLOAF


INGREDIENTS


2 Pounds of ground beef

2 Eggs

1 Medium Red Onion (Chopped)

3 Teaspoons of minced Garlic

1/4 Cup of Ketchup

1 1/2 Teaspoon of Salt

1 Teaspoon Black Pepper

1 Teaspoon Onion Powder

1 Teaspoon Garlic Powder

1 Tablespoon of Italian Seasoning

1 Cup of Panko Breadcrumbs

1 Tablespoon of Fresh Parsley

1/3 Cup of Beef Broth


DIRECTIONS


In a large bowl combine, all the above ingredients together, blending well. In Loaf pan, gather mixture and form into a loaf, patting meat mixture firmly into loaf pan. Now make the Glaze.


GLAZE


1/2 Cup of Ketchup

3 Tablespoons of Light Brown Sugar

2 Tablespoons of Red Wine Vinegar


In small bowl, mix ingredients together well, spread glaze over Meat Loaf and bake at 350F degrees for 55-60 minutes, let cool before slicing about 10 minutes. Serve with your favorite side. Enjoy!
