This potato dish is a winner in my house, the tender potatoes in a rich creamy cheese sauce is a delicious side dish that you can pair with Chicken, Pork or Beef recipes. You can serve these creamy potatoes as a weeknight side dish or for any special occasion.
In this recipe I used a mixture of Monterey Jack and Cheddar Cheese, also, Fresh Parmesan Cheese and for a little tang I threw in a half of cup of Pepper Jack Cheese. That is the good thing about this recipe you can use what ever cheese you would like to use; I like to experiment with different cheeses from time to time and they all seem to work great!
Since this recipe calls for raw, and not precooked potatoes I would suggest not cooking them less than an hour and a half, so the potatoes will come out tender. Also, I like to use the Russet potatoes when making these because they do cook up tender when sliced thin. In the video you will see that I added the milk in two parts, the last cup I added after the cheese to get it to the consistency that I wanted. But you can play with the sauce to get it the way you would like. Below is the video and recipe, give these a try, have fun. Enjoy!

Stir in cheese and add the other cup of Milk, cook for about 2 minutes until cheese is melted, add onion and garlic powder simmer 2 more minutes. Pour cheese sauce over potatoes and cover with Foil.
Bake at 375F for 1 and a half hours, during the last 10 minutes of baking, remove foil and finish baking for 10 minutes until the potatoes are slightly brown on top. Remove from oven and sprinkle with the parsley. Enjoy!!!
