EGG NOG SWEET POTATO PIE
INGREDIENTS
2 Pillsbury Pie Crust
3 Large Yams
3 Eggs
1 Cup of Light Brown Sugar
3/4 Cup of White Sugar
1 Tablespoon Nutmeg
1 Cup of Egg Nog
1 1/2 Sticks of Softened Butter (Room Temp)
2 Teaspoons of Vanilla Extract
DIRECTIONS
Preheat Oven to 375F degrees.
Wash and boil Sweet Potatoes until fork tender.
In large bowl add sweet potatoes and mix for 1 minute to remove strings, rinse strings from beaters. (see video).
Then add Butter, white sugar, brown sugar, eggs, nutmeg, vanilla and Egg Nog, beat with mixer until batter is smooth. Add batter to Pie Crust and bake for 40-45 minutes. Enjoy!
