When it comes to homemade muffins, Banana Nut Muffins are my favorite muffin to eat, when I go shopping, I always pick up a few to eat with my coffee in the morning, to me that is the perfect pair for breakfast. So, I decided one day that I was going to try my hand at making these muffins myself. I played around with a few variations until I produced this recipe and believe me guys it’s a good one.
The muffins came out of the oven, and I let them cool for about five minutes before trying one and I could not believe how moist and delicious they were. The banana flavor was simply amazing, so fresh and sweet, pair with the walnuts was a match mad in heaven. I was so pleased with the way the muffins turned out and I was able to get 18 muffins out of this recipe which was enough to let my family and I indulge on them for a few days.
You can serve these muffins for breakfast, brunch, or a light snack, or when ever you feel like you need to eat one, they are that good. If you don’t like Walnuts then feel free to substitute with Pecans or any other nut that you prefer, i am just a lover of Walnuts so I decided to use them in my recipe, but using another kind will not alter the recipe, it will still taste amazing. HOMEMADE BANANA NUT MUFFINS
INGREDIENTS
3 Large Bananas
2 Eggs
1 Stick of Butter
1 1/4 Cup of Sugar
1/2 Cup of Chopped Walnuts
1 Teaspoon of Vanilla Extract
1/2 Cup of Buttermilk
2 Cups of All Purpose Flour
1/2 Teaspoon of Cinnamon
1/2 Teaspoon of Nutmeg
1/2 Teaspoon of Salt
1 Teaspoon of Baking Soda
DIRECTIONS
PREHEAT OVER TO 350F DEGREES
In Large bowl mash up Bananas, in separate bowl, cream sugar and butter together, add Eggs and Vanilla Flavoring, using hand mixer blend together for about 2 minutes until creamy. Add Bananas, blending until combined, add Buttermilk, blend until combined.
In Shifter (or you can place in another bowl to combine the dry ingredients together) add Flour, Baking Soda, Salt, Cinnamon, and Nutmeg, shift together right into the batter, half of the dry ingredients at a time, using hand mixer to blend until combined for about 2 minutes. After all ingredients are combined, place paper liners in muffin pans or lightly grease each muffin cup with vegetable oil. Using an ice cream scoop or spoon and add batter. Bake in a 350F degrees for 25 minutes until golden brown. Makes 18 Muffins. Enjoy!
