2 cans Salmon

1/4 Cup and 1 Tablespoon Mayo

2 Tablespoons Dijon Mustard

1 Tablespoon and 1 Teaspoon Old Bay Seasoning

1 Tablespoon of McCormick All-Purpose Seasoning

1 Cup Panko Breadcrumbs

1 Egg (beaten)

Salt & Pepper to Taste

1 Teaspoon Lemon juice

2 Tablespoons Butter to (sauté veggies)

1/4 Cup Red Onion (finely chopped)

1/2 Red Bell Pepper (finely chopped)

5 Cloves Garlic (minced or pressed)

2 Tablespoons of Butter (for frying)

Olive Oil for frying 1-2 Tablespoons.

Add to skillet, 2 tablespoons butter, red bell pepper, and onion, sauté until veggies are soft, add garlic and sauté about 1-2 more minutes, then remove from heat to cool. In large bowl, add Salmon, salt, pepper, old bay, all-purpose seasoning, Lemon juice, and Breadcrumbs, mixing to combine well.

Then add Mayo, and Dijon mustard, mix well and taste to see if you have enough salt etc. Then add egg and form into patties, add 2 tablespoons butter to skillet and 1-2 tablespoons olive oil, fry patties over medium heat until golden brown on both sides for about 4 minutes on each side, remove from skillet and drain on paper towels. Serve with your favorite side. Enjoy!
