SOUTHERN FRIED CHICKEN AND WAFFLES
INGREDIENTS
CHICKEN BRINE
3 Boneless Chicken Breast (cut in 3 pieces)
2 1/4 Cup of Buttermilk
1 Tablespoon Onion Powder
1 Tablespoon Garlic Powder
1 Tablespoon Black Pepper
1 Tablespoon of Paprika
2 Tablespoons of Kosher Salt
1 Teaspoon of Cumin
Marinate Chicken at least 4 hours or overnight
FLOUR DREDGE FOR CHICKEN
2 Cup of All-Purpose Flour
1/3 Cup of Corn Starch
2 Teaspoons Baking Powder
1 Tablespoon of Garlic Powder
1 Tablespoon of Onion Powder
1 Tablespoon of Black Pepper
1 Teaspoon of Salt
1 Teaspoon of Chili Powder
Dredge Chicken in flour, wait 5 minutes then dredge again
Fry Chicken at 350-360 degrees for about 15 minutes until golden brown
WAFFLE BATTER
2 Cups of All-Purpose Flour
1 Tablespoon of Baking Powder
1/2 Teaspoon Salt
2 Tablespoon of Sugar
2 Eggs Separated
1/2 Cup of Butter Melted
1 1/3 Cup of Milk
Mix all ingredients plus the 2 egg yolks together
Beat egg whites until stiff peaks form and fold into batter.
Cook in Waffle Iron about 5 minutes until golden brown
