BUTTER GARLIC SHRIMP SCAMPI WITH ANGEL HAIR PASTA

When it comes to shrimp recipes, I would say that Shrimp Scampi is my favorite, even though I can gulp down fried shrimp with no remorse, I do prefer a Scampi more than Fried. When I make this recipe, I use fresh garlic and parsley, also for that special twist I use 2 teaspoons of garlic powder to enhance the fresh garlic. I also like to serve my scampi over some sort of pasta. In this recipe I used Angel Hair Pasta, but you can use the pasta of your choice.


Shrimp Scampi is a delightful dish that you can serve to family, friends or a one meal dish when you just want to sit back and watch a movie and indulge in the buttery garlic taste of the delectable sauce. When I make this dish, I like to serve it with a parmesan garlic bread and a nice, chilled glass of white wine. Give this recipe a try, you will be glad that you did. It is a simple recipe to make, just do not overcook the shrimp because they will have a rubbery texture when they are overcooked. Watch the below video to see how fast this dish comes together.






BUTTER GARLIC SHRIMP SCAMPI WITH ANGEL HAIR PASTA


INGREDIENTS

1 1/2 POUNDS OF RAW SHRIMP (YOU CAN LEAVE THE TAIL ON OR OFF)

3 TABLESPOONS OF OLIVE OIL

3 TABLESPOONS OF BUTTER

3 LARGE GARLIC CLOVES CHOPPED

SALT & PEPPER TO TASTE

SAUCE

3 TABLESPOONS OF OLIVE OIL

3 TABLESPOONS OF BUTTER

3 CHOPPED GARLIC CLOVES

1/4 CUP OF WHITE WINE

2 TABLESPOON OF LEMON JUICE

1/4 TEASPOON OF GROUND RED PEPPER

1/4 CUP OF FRESH CHOPPED PARSLEY

1 TEASPOON OF GARLIC POWDER

DIRECTIONS

COOK SHRIMP IN OLIVE OIL, BUTTER & GARLIC, SALT & PEPPER ON BOTH SIDES FOR 2 MINUTES, REMOVE SHRIMP. IN PAN ADD OLIVE OIL, BUTTER, GARLIC, WHITH WINE, LEMON JUICE AND RED PEPPER AND PARSLEY. LET REDUCE/SIMMER FOR 2 MINUTES, ADD PASTA & GARLIC POWDER SIMMER FOR ANOTHER MINUTE AND ENJOY. IN THE VIDEO I ALMOST FORGOT THE GARLIC POWDER SO I ADDED IT TO THE END, BUT YOU SHOULD ADD IT AFTER THE PARSLEY. TASTE IT AND ADD MORE SALT IF NEEDED.
