AWESOME MAC & CHEESE

Macaroni and Cheese is a dish that you will probably find that most households serve at least once a month. It is also a dish that a lot of family’s serves during the holidays. What I like about Macaroni & Cheese is that there are numerous recipes out there, you will find recipes that use various cheeses and ingredients, I have also seen recipes where Bacon or Lobster is included in the dish. Mac & Cheese can also be classified as a casserole.


In my recipe I used Six different cheeses, Sharp Cheddar, Cream Cheese, Colby Jack, Pepper Jack, Gouda and Mild Cheddar Cheese, and to make it even creamier, I used Milk and Heavy Cream. You can make this recipe your own by using whatever cheeses you like, but I suggest using the Heavy Cream along with the milk, believe me guys you will be amazed at how cheesy and creamy your dish will be.


Also, in my recipe I used Sour Cream, I only added 3 tablespoons but, the sour cream added a little zing to the dish, that little zing that makes you say hmmm! Like I said you can take my recipe and make it your own, my recipe is delicious the way it is, but do you. It took me awhile to come up with this recipe, I played around with difference cheeses until I found the combination of cheeses that I like. AWESOME MACARONI & CHEESE


INGREDIENTS


1 Pound box of Elbows Macaroni

1/3 Cup of Butter

3 Tablespoons of Flour

2 Cups of Whole Milk

1 Cup of Heavy Cream

3 Tablespoons of Sour Cream

1 Egg

Another 1/3 cup of butter (to pour over macaroni)


CHEESE


1 8 Ounce Brick of Cream Cheese

1 8 Ounce Brick of Cheddar Cheese

1 8 Ounce Brick of Gouda Cheese

1 8 Ounce Bag of Cubed Pepper Jack

1 4 Ounce pack of Cubed Colby Jack

7 Slices of Mild Cheddar Cheese for topping


SEASONINGS


Salt

Black Pepper

1 Teaspoon of Paprika

2 Teaspoons of Garlic Powder



DIRECTIONS


Boil Elbow Macaroni for 8 minutes until al dente, drain in colander, do not rinse, set aside. In large skillet or pot melt 1/3 cup of butter, then stir-in, 3 Tablespoons of Flour, cook stirring frequently for about 1 minute until flour and butter is completely combined.


Add 2 cups of Whole Milk, again stirring frequently until it starts to thicken, then add 1 cup of Heavy Cream. When the milk and cream thicken to a sauce, add Cream Cheese, stirring until melted, then add the Cheddar Cheese, Gouda Cheese, stirring until melted. Then add the Pepper Jack and Colby Jack Cheese, again stirring until melted.


When all cheeses are completely combined add all the seasonings, Salt, Black Pepper, Garlic Powder, and Paprika, add the Salt and Pepper to your own taste. After the seasonings are combined with the cheese sauce, in small bowl, remove ¼ cup of the cheese sauce, let cool, then beat in one egg until combined.


In 13x9 casserole add macaroni, then pour 1/3 cup of melted butter over macaroni mixing to combine, add more salt and pepper if desired. Stir in the cheese and egg sauce, mix until combined, then add the rest of the cheese sauce, mixing to make sure all the macaroni is completely covered in cheese sauce. Then breaking into pieces, add the slices of Mild Cheddar Cheese on top, using a spoon to push some of the cheese down in the macaroni (like in the video). Cover casserole lightly with foil, but sealing the edges tight, Bake at 350 degrees for 30-35 minutes. After 20 minutes, remove foil and continue baking for another 15 minutes. Enjoy!
