This Broccoli Cauliflower salad is delicious, it is packed with flavor. The Bacon and Sunflower seeds give this salad a delightful crunch in every bite. This salad can be paired with different meats as a side dish such as fried chicken, pork chops and Barbeque or it can be eaten alone as a lighter meal.
The salad is easy to make, what I like about it is you can make it ahead of time and put it in the fridge. What is great about this salad, when it is refrigerated for a few hours, the flavors marinated together. Some cooks add raisins or craisins to their salad, but I am not too fond of either one or neither is my family, so I decided to sprinkle in some shredded cheddar cheese right at the end when I made my salad, but you can throw in whatever you like to put your own twist on this recipe.
When making this salad make sure you cut you Broccoli and Cauliflower into bite size pieces so all the dressing can go into every bite, I would not recommend leaving them large like they are on the bunch and cutting them in bite size pieces gives you more salad per serving. BROCCOLI CAULIFLOWER SALAD
INGREDIENTS
1 MEDIUM BUNCH OF BROCCOLIS
SMALL HEAD OF CAULIFLOWER
1/4 CUP OF RED ONION
4 TABLESPOONS OF RED WINE VINEGAR
1 1/2 CUP OF MAYONNAISE
2 TEASPOONS OF SUGAR
3/4 CUP SUNFLOWER KERNEL’S
1/2 CUP OF CRUMBLED BACON
1/2 CUP OF SHREDDED CHEDDAR CHEESE
DIRECTIONS
Using a cutting board, cut Broccoli and Cauliflower into bite size pieces, place in large mixing bowl. In small bowl, mix Mayonnaise, Red wine vinegar, and sugar, blend until smooth.
Pour half of the dressing over Broccoli/Cauliflower, then add Sunflower kernels, and Bacon, mix well. Pour the remainder of the dressing over salad, add the Cheddar cheese and mix until well combined. Chill and enjoy!
