LUE'S APPLE PIE

According to Wikipedia, Apple Pie is an unofficial symbol of the United States and one of its signature comfort foods. And a comfort food it is, when I was a child, I can remember my mom making Apple pie during most holidays or just when she felt like baking, Apple pie was her go to recipe. She would make her pie with a double crust, and I can remember during the holiday’s she would get fancy with it and make the pie with a Latticed crust which is when you would cut the dough in strips and lay them crosswise so they would look that the strips were woven together.


The lattice method takes a little more time but, the pie looks beautiful when that method is used. I will have to try that one day. This Apple pie recipe is easy as pie to make, I love the play on words, the only time-consuming task is peeling and slicing the apples, once that part is done the pie can be put together in no time at all. My mom would squeeze the lemon over the apples then mix the dry ingredients together and pour it over the apples. Then she would slice the butter and lay it over the apples then add the crust. I know this might seem a little strange to some but believe me the method works.


When the pie bakes the butter melts and blends with the sugar and seasonings, then Wow! A delicious pie, and as I said in the below recipe, my mom said you will know when the pie is done when it cooks over, and that usually happens about 55 minutes during baking. Make sure the crust is golden brown and be sure to put the pie on a baking sheet to protect the bottom of your oven because some of the juices will cook over. LUE’S APPLE PIE


INGREDIENTS

6 GRANNIE SMITH APPLES

6 MACINTOSH APPLES

1 CUP SUGAR

3/4 CUP LIGHT BROWN SUGAR

3 TABLESPOONS OF FLOUR

2 TEASPOONS OF NUTMEG

2 TEASPOONS OF CINNAMON

1/4 CUP OF FRESH LEMON JUICE

1 STICK OF BUTTER

1 BOX OF PILLSBURY PIE CRUST

1 EGG WHITE


DIRECTIONS

PEEL AND THINLY SLICE APPLES, POUR LEMON JUICE OVER APPLES AND MIX WELL. IN SEPARATE BOWL MIX SUGAR, NUTMEG, CINNAMON, AND FLOUR TOGETHER, BLEND WELL. POUR SUGAR MIXTURE OVER APPLES AND MIX UNTIL WELL INCORPORATED.


ADD APPLES TO BOTTOM PIE CRUST, CUT 1 STICK OF BUTTER INTO 8 PIECES AND LAY ON APPLES. ADD TOP CRUST AND FOLD TOP CRUST UNDER EDGES OF BOTTOM CRUST, PINCH TOGETER TO SEAL. BRUSH EGG WHITE OVER CRUST, PLACE PIE ON BAKING SHEET TO CATCH ANY JUICE THAT WILL DRIP, BAKE AT 375F FOR 55-60 MINUTES.


(NOTE) MY MOM TOLD ME THAT SHE NEVER TAKES THE PIE OUT UNTIL THE JUICES COOK OVER AND THE CRUST IS GOLDEN BROWN, SHE SAID THAT IS HOW SHE KNOWS THE PIE IS READY AND THE APPLES ARE DONE. ENJOY!!!
