LUE'S POTATO SALAD WEST VIRGINIA STYLE

Potato Salad is an all-around favorite when it comes to salads that can be served with almost any meat entrée. It can be served as a side with Fried Chicken, Steak, Seafood, or any type of Barbeque entrée, it is just one of those salads that can be served basically with any meat. When I was young I can remember my mom who is better known as Lue, her real name is Luvenia, making potato salad during the holidays or when guest would come over, she would make it as a side dish, or anytime we had a taste for potato salad which was often.


My mom was from West Virginia and this is the way she would make her potato salad, the only difference was she would put pimentos in her salad, I left them out because I was never a fan of pimentos so I did not put them in my recipe, but you can add them to your recipe, it’s optional, like I said before, you can take anyone of my recipes and add as little, or as much of the ingredients as you like, just do you, always season to taste.


View the video and recipe below, and do you guys, but I would not skimp on the eggs, the way my mom made her salad, she always added a lot of eggs, it gives your salad an amazing flavor. So, try this recipe, you can also use pickle relish instead of sweet relish, just do you and Enjoy!









LUE’S POTATO SALAD WEST VIRGINIA STYLE




INGREDIENTS

10 Medium sized Potatoes – Peeled. Chopped and boiled until tender

12 Hard Boiled Eggs – chop 10 save 2 for garnish

2 Cups of Mayo

4 oz of Sweet Relish, use half of 8 oz jar

1 Half of Onion finely chopped

2 Stalks of Celery finely chopped

3 Tablespoons Yellow Mustard

2 Tablespoons Sugar

2 Teaspoons Salt

1/2 Teaspoon of Ground Red Pepper

1 Teaspoon of Paprika

1/2 Teaspoon of Celery Salt


DIRECTIONS

In large bowl, mix Mayo, Celery, Onions, Relish, Mustard, Celery Salt, Red Pepper, Paprika, Sugar, and Salt, blend well, set aside. In large bowl or pan, add Potatoes, and Eggs, blending well.

Pour dressing over potatoes and eggs mixing until all ingredients are well blended, taste the salad to see if you have enough ingredients to your liking, add more salt, or sugar and pepper if needed. Enjoy!
