MEXICAN STREET CORN IN THE NINJA FOODI SMART XL GRILL

Updated: Nov 30, 2022

Calling all corn lovers. If you are one of the resolute corn lovers out there, then this recipe is for you. When I Prepared this recipe for my family, let me tell you it went amazingly fast. They had never tasted corn like this before and they were incredibly pleased with this recipe and the corn just disappeared from the plate.

When I am gathering my thoughts on what to cook next for my blog, I try to pick a recipe that I do not normally make and one that my family is not accustomed to eating. Doing this allows me to see the looks on their faces when they try something they never had before. This is my test kitchen and if I prepare a recipe that does not make the cut, then I will not put it on my site, my recipes must be approved by family, friends, and me.

So, I decided to do the Mexican Street corn, also known as Elotes. Elotes are corn cobs covered in mayonnaise, crumbled queso fresco, chili powder, and lime juice, served on a wooden stick for easy handling. You can also add Cilantro like I did in this recipe. You can also use whatever Mexican cheese you would like to use, in my recipe, I used a Mexican blend, whatever works for you, some cooks are known to use Parmesan Cheese instead.

Give this recipe a try and let me know what you think. I just purchased a new Ninja Foodie Smart XL Grill and wanted to try it, my corn turned out perfect, but you can use any indoor grill or outdoor grill to prepare this corn, just keep an eye on it to keep it from burning.

Please view the recipe and video below. Enjoy!
