Mixed Berry Shortcake Parfait

Updated: Dec 1, 2022

This dessert must be one of the easiest desserts that I have ever made, and it taste delicious. To be honest I took the easy way out, I did not want to spend time Baking a pound cake that would have taken at least 2 hours to make, with the preparation and baking time.

These days with working from home, where I am constantly near my kitchen, I wanted to make something that would be easy in and easy out. So, I decided to take this short cut to get the same result as a timelier method. No judgement please, see the recipe below I think you will like this, try it for yourself and let me know in the comment box below.

1 Bag of Frozen Fruit - Mixed Berries

3 Tablespoons of sugar

1- Pack of Short Cake Dessert cups = 3 parfaits

1 Container of Extra Creamy Cool Whip

Step 1 - Pour the frozen Berries in a bowl and add the 3 tablespoons of sugar over the berries, mix well, let stand until the fruit thaws. The sugar will make a syrup.

This recipe will make 3 parfaits, 1 pack of dessert cups should have a total of 6 cups in each pack.

In 3 dessert glasses, put 1 Shortcake dessert cup cut in 4 pieces in the bottom of each glass. Spoon 2 tablespoons of Cool Whip over the Shortcake, then, spoon 2 tablespoons of the Berries making sure some of the syrup is included over the Cool Whip, repeat this process again adding, Shortcake, Cool Whip, and Berries. Each dessert cup should have 2 layers of cake, cool whip and berries. At the very top add a dollop of cool whip and add a berry on top. See my photo. Enjoy!
