NEW YEARS EVE BLACK-EYED PEAS NINJA FOODI PRESSURE COOKER

This Black-Eyed Peas recipe is a soul food favorite, cooked with Ham Shank, Ham Hocks, or bacon, you can most definitely say that this is comfort food indeed. When I was growing up I can remember most of my family would prepare black-eyed peas for New Year’s Eve, and I was always told that you will prosper in the new year, but in our house my mom would prepare black-eyed peas at least 3 or 4 times a year.


My mom would always prepare rice to go with the black-eyed peas and a side of her delicious corn bread, I mean to tell you that this was good eating. The smell alone in the house when she would cook these peas where enough to drive you crazy, my cousin use to say, your mom’s beans are so good that they taste like steak. I know that sounds a little far fetched but her beans were so good, and when I asked her how she made them she said that she put love in the pot.


I was thinking ok, I am going to have to watch her make them to see how exactly she did this. One day I sat there with a pen and wrote down all her steps and ingredients and concluded that one of the secret ingredients was Butter, I mean who knew. The butter gave the texture of the peas a smooth and creamy taste. Please view the video and recipe below and try this for yourself, these peas are amazing.








NEW YEAR’S EVE BLACK-EYED PEAS

NINJA FOODI PRESSURE COOKER/AIR FRYER


INGREDIENTS

2 Pounds of Black-Eyed Peas

1 Ham Shank or 2 Ham Hocks

1 Tablespoon Better than Bouillon Chicken Base

1 Cup of Water, mix with Chicken Base

3 3/4 Cups of Water to cover peas

1 Large Onion (Sliced Thin)

8 Cloves of Garlic (minced)

1 Stick of Butter

2 Teaspoons of Onion Powder

2 Teaspoons of Garlic Powder

1 Tablespoon of Sea Salt

2 Tablespoons of Sugar

1/2 Teaspoon of Ground Red Pepper


DIRECTIONS

Pick and wash black-eyed peas and soak for 2 hours. Turn on Ninja Foodi Pressure Cooker, add 2 cups of water to pressure cooker, add Ham Shank, set cooker to Pressure, High, set to 30 minutes. After 30 minutes, release pressure on cooker. Add chicken broth, then add Peas and 3 3/4 cups of water to cover peas, then add onion powder, garlic powder, salt, then add fresh garlic and red pepper, stirring well to combine all ingredients. Put pressure lid back on and set cooker to 45 minutes. After 45 minutes, release pressure and remove lid. Add the stick of butter and onions, and stir well, then add sugar, stirring to blend well. Put pressure lid back on and cook for 10 minutes. After 10 minutes, the peas are done. Enjoy!
