SOUTHWESTERN CHICKEN SALAD BOWLS
INGREDIENTS
2 BAGS of PERDU (fully cooked) GRILLED CHICKEN BREAST
FLOUR TORTILLA SHELLS
VEGETABLE OIL FOR FRYING
GRILLED CHICKEN BREAST SLICED
1/2 TEASPOON CHILI POWDER
1/2 TEASPOON CUMIN
1 TEASPOON GARLIC POWDER
1 TEASPOON CILANTRO
1/2 TEASPOON SALT
1/2 TEASPOON PEPPER 1 TABLESPOON OLIVE OIL
LETTUCE
CHERRY TOMATOES
BLACK BEANS
CORN
RED ONION
AVOCADO
CILANTRO
DIRECTIONS
In Medium size bowl mix chicken, chili powder, cumin, garlic powder, and cilantro, blending well, set aside. In another medium bowl mix black beans, corn, red onion, chili powder, cumin, garlic powder, salt and pepper, blending well. Set aside. Meanwhile heat oil in large pot or Dutch oven, fry tortillas as shown in video to get the bowl shape, drain on rack or paper towels. Assemble salad to your liking using the dressing of your choice. Enjoy!
